These cookies are so cute and unique! They are perfect for handing out as gifts or goodies at birthday parties. The dough can be frozen and thawed out for about 10-15 minutes before baking.
Ingredients:
1/2 Cup Unsalted Butter (room temperature)
1/4 Cup Shortening (room temperature)
3 Ounces Cream Cheese (room temperature)
1 1/4 Cup Sugar
1 Egg
1 Tsp Vanilla Extract
2 Cups All Purpose Flour
1/2 Tsp Salt
Food Coloring (red, orange, yellow, green, blue, & purple)
Sprinkles, Decorations, etc. (optional)
In a small bowl, whisk the Salt with the Flour. In a large bowl, cream Butter, Shortening, and Cream Cheese. Beat in Sugar. Beat in Egg and Vanilla. Reduce the speed to low and add flour mixture. Scrape down the sides to ensure that the flour is well-incorperated. On a floured surface, roll dough into a log shape and divide into 6 pieces. Color each portion with Food Coloring. Divide each colored portion into eighths. Chill dough in the Fridge for 1 hour or in the Freezer for about 20 minutes. Preheat oven to 375 degrees. Roll each portion of dough into log shapes and stack on top of each other and roll. Twist log gently just until you can see all the colors slightly bonded together. Roll into what you imagine Unicorn Poop looks like! Decorate if desired. Place shapes onto an un-greased cookie sheet about 2-3 inches apart. Bake for about 15-17 minutes. Let cool completely on a wire rack.
